Casu Marzu is made on basis of another famous cheese, pecorino. A cheese fly lays its larvae in a cheese block. After that, begins the process of decomposition. Within days, a hard cheese is turned into a paste. It can be eaten only as long as live larvae are seen in the paste. If not, it means that the cheese has decomposed to a toxic state and became a deadly poison. For a long time, Casu Marzu was officially banned for sale in Italy.
